Trippa
Chef Diego Rossi and Pietro Caroli opened their trattoria Trippa in Porta Romana this June, which quickly became one of Milan’s most sought after tables for its refined, yet simple, flavorful cuisine. Standouts include baccalà mantecato; vitello tonnato; lanzardo in carpione and Spaghettoni Gentile with lemon, basil, tuna and coffee.

Contraste
This September, chef Matias Perdomo, formerly of the one-star Michelin-rated Al Pont de Ferr, opened Contraste near the Navigli along with Al Pont de Ferr, Thomas Piras and Simon Press. The first page of the tasting menu, named Riflesso, displays a mirror in which patrons see their reflection; they may opt to place their trust in the chef, who will interpret their desires and preferences into a tailored tasting menu. Those who prefer to know their courses in advance can ask for a printed menu.

Spazio
Chef Niko Romito of the three-star Michelin Ristorante Reale in Abruzzo opened Spazio—part restaurant, part laboratory—on the top floor of the new Mercato del Duomo in Milan this past spring. The cuisine focuses strongly on Lombardian and Northern Italian traditions with a modern touch.

Tre Cristi
While this trattoria dating back to 1830 didn’t just open, chef Paolo Lopriore’s post as executive chef is new. Instead of focusing on precious plating, the often misunderstood gastronomic maverick serves the food in pots, pans, cocottes and other cookware–all from Le Creuset–allowing patrons to determine their own portion sizes; the menu offers four choices each among antipasti, primi, secondo and desserts, and changes regularly at the whim of the chef.

James Beard American Restaurant in Milan
For a taste of the U.S.A., the James Beard American Restaurant at the Seven Stars Hotel in Milan is a downtown extension of the U.S.A. Pavilion at Expo 2015 and features a guest chef line-up that showcases the best of American culinary talent. The September and October roster includes Tom Colicchio of Craft in New York, Ming Tsai of Blue Dragon in Boston and David Kinch of Manresa in Los Gatos (California).
