Alfresco Dining & Latin Cuisine Awaits At Colombia’s Alma Restaurant.

If you’re headed to Cartagena on Holiday you’d be remiss if you didn’t stop by the new Alma Restaurant at Hotel Casa San Augustin.  Located in the heart of Cartagena’s walled city, three whitewashed 17th-century buildings make up Hotel Casa San Augustin, which now hosts the new Alma Restaurant, the latest addition to the luxury resort.

The Restaurant, helmed by Executive Chef Heberto Eljach, offers alfresco dining in the courtyard or indoors, amid Colombian-crafted fixtures and modern furnishings.

Interior designer Kelley McRorie created a stylish and tasteful environment leveraging the marble floors and original wood-beam ceilings which complement the rustic touches like wicker tables protected with glass tops, hand-carved cabinets, and decorative mosaic wall hangings.

Over-sized lanterns, comfy leather banquettes and luxuriant foliage modernize Alma’s refined dining room. A pool, located in the center of the restaurant, extends outdoors to a courtyard that connects the trio of Spanish-colonial mansion houses, within old Cartagena’s UNESCO-protected perimeter wall, that make up the 5-Star hotel.

Opened last month, the restaurant offers a contemporary take on Latin cuisine.  Alma’s regionally inspired menu is anchored in culinary traditions of the Caribbean.

Chef Heberto Eljach draws on his experiences in ‘Australasia’, Cambodia, Thailand and Indonesia to create menus of striking originality. The dishes radiate the vibrant energy of Cartagena and brings a passion for inspired gastronomy.

Chef Eljach’s contemporary Colombian cuisine makes the most of the area’s local ingredients from freshly caught seafood for a Colombian-style bouillabaisse to marinated roasted sea bass, to dry-aged beef cured on the premises, to slow-cooked lamb infused with Latin flavors.

The restaurant includes an intimate bar that serves creative cocktails from the mixologists, and includes bar-bites from the kitchen such as a zesty mini ceviche of trout, shrimp and octopus and local conch croquettes with remoulade.
